Braised Black Pepper Goby Fish Recipe
The Soon Hock fish, or Marbled Goby, is a premium freshwater fish that is highly popular in many Asian countries including Singapore, which makes this fish rather expensive. This premium freshwater fish is white opaque and has a very delicate taste and texture.
In the local market, it is known as “ikan malas” or translated in English as “lazy fish” because its characteristics of being very inactive and their only movement made is to catch food in front of their mouth.

Clean the scales of the Goby, cut off the fins and tail, remove the gut. Rub the fish with salt to clean, rinse with clean water and drain it. Marinate the goby with 1.5 tablespoons fish sauce, 2 teaspoons sugar, 2 teaspoons seasoning, ground pepper, and half of the minced onion. Mix well to allow the fish to absorb the seasoning and then marinate for 20 minutes. Put an earthen pot on the stove, add 1 tablespoon of cooking oil into the pot, add 3 tablespoons of white sugar, then turn on the stove and stir until the sugar boils and turns into a dark brown color. Add in purple onions, minced garlic and add in the goby, gently stir, keeping the fire low until the water thickens and then turn off the stove. Serve with rice and boiled vegetables and enjoy.
